{Yum} Tortilla Roll-Ups

It's news to me, but apparently there's a big game next weekend. I'm usually more invested in the Super Bowl, but with none of our teams in it this year, I've kind of checked out. Which means I'll have none of the nail-biting angst, and all of the eating, drinking and fun! (Note to self: Wear leggings.)
Today I'm sharing a family-favorite recipe, perfect for game day...or any casual gathering. Since as far back as I can remember, these spicy little roll-ups have been at every family get-together, and have never varied or strayed from the original recipe. Apart from the number of jalapeños used...some family members are wussier spicier than others. #gimmeallthepeppers

{What You Need}
8 oz. Cream Cheese, softened1 c. Sour Cream4 oz. Chopped Black Olives1/4 c. Green Olives, chopped4 oz. Diced Green Chilies2 c. Shredded Cheddar Cheese1/4 c. Green Onions, chopped1 tsp. Garlic SaltFlour Tortillas (8 burrito or 12 taco)Jalapeños to taste, chopped
{What You Do}
* Dump it all in a bowl. Done. Well, almost.

* Spread a thin layer of mixture on a flour tortilla. You can use any size tortillas, but I prefer the burrito-sized for less gluttony (you'll see what I mean in a second).

* Roll the tortillas, and place them tightly in a pyrex dish, seam side down (preferably one with a seal-tight lid). Layer damp paper towels between layers, and on top. Seal the dish with lid or foil.
* Refrigerate overnight, or several hours. This allows the tortillas to soften so they hold their shape and don't crack when cut.

* Cut the ends off each tortilla roll, and try not to pop each and every one
in your mouth in the process. #goodluckwiththat

* Cut the remaining tortilla into bite-sized sections. Try to save those for your guests. #yeahright

It really doesn't get much easier...the only trick is remembering to make them the day before. My kids inhale them too...in fact, my daughter has packed this batch in her lunch everyday this week! I tend to add more jalapeños every time I make them, but I'm spicy like that. #seewhatIdidthere
